Strawberry Shortcake

  • 150g flour
  • 3 eggs (whole)
  • 1 egg yolk
  • 120g sugar
  • 120g Anchor Butter (salted), softened
  • 1 tsp baking powder
  • 1 tsp vanilla
  • A pinch of salt
  • 200 ml whipped cream
  • 2 tbsp powdered sugar
  • Strawberries




  1. Preheat the oven to 180C and prepare a pan with parchment paper.
  2. In a bowl, mix flour with baking powder and salt, set aside.
  3. Beat the eggs, sugar and vanilla with electric mixer until soft peaks. Add the butter, and continue to mix it.
  4. Switch mixer to slow speed, add the dry ingredients gradually. Turn off the electric mixer when the batter has completely blended.
  5. Pour the batter into the pan. Bake about 50-60 mins until a toothpick inserted into the cake comes out completely clean.
  6. To prepare the cream: beat whipping cream and sugar with electric mixer. Set aside.
  7. Cut the cake into half, spread the cream on the top of both slices, add the strawberry. Put it together again, garnish with strawberry on top!
