Method
  1. Preheat oven to 170ºC.
  2. Zest lemon into sugar and mix well. Add egg and beat until fluffy.
  3. Add flour, baking powder and poppy seeds and mix until crumbly.
  4. In separate bowl add lemon juice, milk, melted butter.
  5. Add half wet ingredients and mix well. Add remaining ingredients and mix until just combined.
  6. Line loaf tin and pour mixture in (do not use all the mixture only ¾ of the tin full).
  7. Add 50g raspberries and push in.
  8. Add melted butter line in middle across the top of the cake (this helps it split in half) **optional.
  9. Bake for 50-55mins until skewer comes out clean.
  10. While hot poke holes into the cake and brush over fresh lemon juice
Lemon Glaze
  1. Mix together the lemon juice and sugar and then place in piping bag.
Raspberry Glaze
  1. Add all ingredients to pan, and bring to boil.
  2. Turn down the heat to low, and add more water and lemon as needed to thin it out.
To Assemble
  1. Once slightly cool add the lemon glaze onto the top of the cake, ensuring all the top is covered and pours over the edges
  2. Randomly spoon the raspberry glaze over the top.
  3. Top with decorations.
