Banana Cake in 3x 8-inch pan
Hummingbird Cake in two loaf pans filled to half quantity and made shorter with foil

Cream cheese icing
  1. Grease cake tins. Make cake batters – measure in same ingredients when you can. Preheat oven to 165C fan.
Banana Cake
  1. Mash the bananas in kitchen aid and put in bowl.
  2. Whisk the flour, baking powder, baking soda, cinnamon, and salt together.
  3. Beat the butter, granulated sugar, and brown sugar together until smooth and creamy, about 2 minutes. Scrape down the sides and add the eggs and the vanilla. Beat on medium-high speed until combined. You can then beat in the mashed bananas.
  4. On low speed, add the dry ingredients in a few additions, alternating with the buttermilk and mixing each addition just until incorporated not overmixed.
  5. Divide batter evenly between 3 pans.
  6. Bake for 22-26 minutes.
Hummingbird Cake
  1. Add all dry ingredients – flour, baking powder and soda, spices, salt, sugar and stir.
  2. Make a well and add banana, pineapple, oil, eggs, and vanilla.
  3. Gently stir and pour into loaf tins (not fully, nearly halfway is enough).
  4. Bake approx. 20 mins
  1. Roast pecans for 5 mins. Let the sugar melt in a pot with the water until it is golden, only swirl gently. Pour in nuts and spread them on a baking sheet.
Cream cheese icing
  1. Whip all ingredients together until fluffy.
  1. Whip egg white and castor sugar for about 10 mins on high until stiff peaks. Melt butter and shortening while its whipping. Add icing sugar and whip and then butter mix. Whip 10 mins and whip lastly with paddle attachment.
  2. Colour buttercream yellow, pink, and orange while keeping some aside for the filling.
  3. Colour some cream cheese icing blue and the rest start white with white and purple colouring.
Make caramel mixture
  1. Slice up perfectly ripe bananas toss in cinnamon and brown sugar.
  2. Place sugar and butter in pan until sugar dissolves. Turn up heat and let it get dark and thick. Not past a deep caramel, make sure to gently swirl only. Add rum and heat until hot and thicker.
  3. Make kombi details – windows, number plater, VW, out of chocolate
  4. Make flowers, headlights out of fondant
  5. Make surfboard if time out of chocolate
  1. Layer the cakes with buttercream, caramel bananas, and praline.
  2. Do a layer of buttercream around the outside of the bottom three cakes and stick cake dowels in.
  3. Put layer of buttercream around kombi van then put it in freezer
  4. Pipe on a shag rug pattern. Don’t pipe the top yet but do add some super crushed pecans where the next cake will go.
  5. Using a palette knife, decorate the kombi van can. Add kombi details. Place kombi cake on top of shag cake.
  6. Add surfboard if time.
  7. Put cake on a different cake stand.
