1 cup coarsely ground coffee beans
1 litre room temperature water
½ cup sugar
½ cup water
1 vanilla bean, split
½ cup cold brew coffee
½-3/4 cup Blue A2 milk
2 Tbsp vanilla syrup - or to your taste
1 cup ice cubes
The day before place ground coffee and water in a jug stir, cover and set aside for 6 -12 hours. Place in the fridge if you prefer. Strain the mixture through a coffee filter or double layer of kitchen towel placed inside a sieve. Store coffee concentrate in the fridge and use as desired.
Make the vanilla syrup. Combine sugar and water in a small saucepan, add the vanilla bean and heat till simmering. Simmer gently for 5 minutes. Cool and pour into a screw top jar. Store in the fridge. Vanilla flavour will continue to intensify.
To assemble Iced Vanilla latte, place ice in a tall glass, add ½ cup coffee concentrate, vanilla syrup and top up with ice cold A2 milk.
Coffee concentrate will keep in the fridge for a week and vanilla syrup indefinitely if you remove the vanilla bean.
