Cauliflower Mash 

This cauliflower mash is a creamy, delicious and lighter alternative to your traditional mash. It’s just as easy to make and who knows – it might become a regular at your table! This recipe will serve two, so just double or triple it as required.

½ cauliflower head

½ cup Anchor Cream

1 tablespoon Anchor Unsalted Butter

1/3 cup grated Parmesan


Cut the cauliflower into florets all roughly the same size.

Place in a pot, cover with cold water and season with salt.

Cover, bring to a boil and cook until the cauliflower is tender.

Remove from the heat and drain. Use a stick blender to blend until smooth.

Heat the cream and add to the puréed cauliflower with the butter and Parmesan.

Mix well, season to taste and serve.
