Easy Pizza Omelette

4 eggs

½ cup (125ml) Anchor Full Cream UHT Milk

1 tsp dried mixed herbs

Salt and pepper

1 tablespoon oil

1/2 cup chopped ham

1/2 cup Anchor Shredded Mozzarella  (can use shredded cheddar cheese)

1 tablespoon chopped parsley

1 tomato, sliced



  1. Break the eggs into a bowl and whisk lightly with the milk. Add the herbs and season with salt and pepper.
  2. Heat a frying pan over a medium heat, add a film of oil and then pour  in the eggs.
  3. Cook for a minute before sprinkling over the ham and cheese, cover and cook until just set or place the pan under a hot grill.
  4. Sprinkle with parsley, top with tomato slices and basil. 

Serve warm.
