Corn, Potato and Mozzarella Cakes
- Mix all the ingredients together in a large bowl, being careful to not over mix, just until it comes together.
- Shape ¼ cup batches of mixture into 10 patties or croquettes and dust with a little extra flour.
- Heat a film of oil in a frying pan and fry cakes in batches until golden on both sides.
- Serve hot with your favourite sauce or chutney.
