Flavoured Butters

Ingredients

Horseradish & Shallot Butter

185g Anchor Butter, softened

1 teaspoon  prepared horseradish

1 shallot, finely chopped

 

Garlic, Parsley & Lemon Butter

185g Anchor Butter, softened

2 cloves garlic, finely chopped

2 tablespoons chopped parsley

1 tablespoon finely grated lemon zest

 

Garlic & Herb Butter

185g Anchor Butter, softened

2 garlic cloves, crushed and finely chopped

2 tablespoons chopped fresh herbs (e.g. parsley, rosemary, thyme)

 

Lime, Ginger & Chilli Butter

185g Anchor Butter, softened

Finely grated rind of 1 small lime

2 teaspoons grated fresh ginger

1 small red chilli, finely chopped

 

Capers, Mustard & Chive Butter

185g Anchor Butter, softened

2 teaspoons baby capers, finely chopped

2 teaspoons seeded mustard

2 tablespoons freshly snipped chives

 

Instructions

  1. Place softened butter in a bowl and mix with the preferred flavour variation.  Combine until smooth.  
  2. Roll into two cylinders using baking paper or foil and refrigerate or freeze until required.

To use, cut slices off the log of flavoured butter and add to steamed vegetables, grilled steak, steamed salmon, roasting chicken or warmed bread.

* Add a slice of savoury flavoured butter to: grilled meat, stuff under chicken skin before roasting, use to panfry seafood, stir into risottos, pasta or steamed vegetables. Perfect for herb or garlic bread.
