Cheese pizza in a pan with sautéed mushrooms and tomato rings  sprinkled with oregano

220g self raising flour

3 tbsp. olive oil

For the topping:

3 table spoons of Anchor cream cheese

1 tsps. olive oil

1 tbsp. dry oregano

½ tsp. crushed red pepper

1 cup sliced white mushrooms

½ onion sliced

3 garlic cloves, crushed

¼ cup of mozzarella or cheddar grated

1 large tomato sliced in thin rings

Fresh basil for garnish

Cooking spray

 

1.Heat the oil in a frying pan, then add the mushrooms, onion and garlic and cook for 5 minutes.

2.Remove from the heat, stir in cream cheese, oregano, pepper then allow to cool.

3.Put the flour into a bowl. Make a well in the center, add the olive oil then add 6-7 tbsp. warm water or enough to make a soft dough.

4.Tip the dough onto a lightly floured surface and roll out to fit a 22cm frying pan or make 2 small ones.

5. Heat a glug of olive oil in the frying pan, then press the dough into the pan and cook over a medium heat for 8-10 minutes or until the base is golden.

6.Heat grill oven on to 200 C hot. Spread the pizza base with the mushrooms sauce, sprinkle with cheese and tomato rings and oregano and grill until it has melted and the base is golden at the edges. Serve immediately.
