All in one pot chicken cheesy casserole  with sumac and mint

11/2 cup Anchor cream cheese

1 tablespoon olive oil

1 tablespoon butter

1 small onion finely chopped

2 garlic cloves, crushed

400g skinless boneless chicken thighs

2 cups fresh broccoli florets, chopped

1-2 teaspoons salt according to preference

1 teaspoon of sumac powder

Freshly ground black pepper

Fresh mint for garnish

 

1.Heat a large pot on over high heat. Add oil and butter and once heated, add chicken. Allow to cook for a few minutes until it turns golden brown. Add onion and garlic, stir, and cook until most of the liquid has cooked out, 5-minutes.

2.Cook broccoli in the microwave by adding a tablespoon of water, covering bowl with a plate, and heating on high for 2 minutes. Drain off any excess water.

3.Combine Anchor cream cheese and chicken, stirring with a fork until smooth.

4.Cook 2 minutes or until bubbly and thick, stirring frequently.

5.Stir broccoli into the chicken mixture along with the salt and pepper sprinkle with sumac and fresh mint before serving.
