Chicken
- Heat the Anchor™ Ghee in a large saucepan or casserole on a high heat. Brown the chicken in batches and set aside. Don’t wash the saucepan.
Sauce
- Reduce the pan to a low-medium heat. Add the onion and cinnamon stick and cook for 15-20 minutes, stirring frequently, until the onions are a dark golden colour.
- Add the garlic and ginger and cook for a minute, then add the paprika, garam masala and cardamom and cook for a further minute.
- Stir through the tomato purée and cook for two minutes, then add the cream and ghee and stir well. Remove from the heat and take the cinnamon stick out.
- Use a stick blender to blitz to a smooth sauce. (Take care not to splash yourself.) You can also tip the mixture into a blender to process.
- Return the sauce to the pan with the browned chicken and cook over a low heat for a further 10-15 minutes to heat everything through and ensure the chicken is fully cooked.
To Serve
- Serve the Butter Chicken with fragrant basmati rice, our very own Garlic & Herb Naan Bread and garnish with the fresh coriander and toasted almonds.
