Method
Method
- Melt the Anchor™ Ghee in a heavy-bottom pan on a medium heat. Once melted, reduce the heat to low and stir in the chickpea flour.
- Continue stirring the flour and ghee together. It will form a clump at first, but keep stirring and it will start to loosen up after 7 or 8 minutes. Keep stirring as the mixture becomes looser and lighter – continuous stirring will stop the flour burning.
- After around 15 minutes of stirring you should have a smooth paste-like consistency. This can take up to 30 minutes sometimes, so don’t panic if it takes longer than expected.
- Remove the pan from the heat and keep stirring for another 5 minutes until the mixture has cooled a little.
- Add the sugar and cardamom powder and mix until everything is well combined.
- Pinch a small tablespoon sized portion from the dough. Press it between your palms and then roll between them to form a ball. Repeat with the remaining dough, making all the balls the same size.
- Roll each ball in the chopped nuts or scatter nuts over the top and then store in an airtight container.
