Three Cheese Artichoke & Spinach Dip

Method
  1. Preheat oven to 350 F.
  2. Put spinach in dish covered and microwave for 3 minutes. When spinach is cool, squeeze out liquid.
  3. Grate cheeses and put into a bowl.
  4. Whisk together cream cheese, sharp cheddar and cheddar together until creamy (around 4 min). Set aside a heaped spoonful of this mixture to add on top before baking.
  5. Add spinach, spices, and chopped pistachios to mixture.
  6. Add chopped artichokes and peppers to the mixture and with a spatula, stir to combine.
  7. Add Angostura Orange Bitters and mix to combine.
  8. Put into buttered baking dish. Sprinkle panko crumbs on and add extra cheese mixture on top.
  9. Bake for about 30 to 35 mins or until golden and bubbly.
  10. Remove from oven and let rest for 10 mins before serving up with crackers, chips, vegetables or another side dish.
