Here’s a delicious twist on a seasonal favourite, our pumpkin mash recipe. Sweet creamy butternut gets a burst of flavour with lime and a little kick of ginger.

Method
  1. Melt butter in a pan over medium heat. Add ginger and stir until fragrant (about 2-3 minutes).
  2. Add pumpkin, 200ml water, and season to taste.
  3. Cover and simmer until pumpkin is soft (25-35 minutes).
  4. Add lime zest then coarsely mash with a fork or potato masher.
  5. Serving Suggestions Serve this healthy and hearty side dish alongside steamed green beans and roast NZ lamb.
