Leftover Xmas Ham Mac and Cheese
This leftover Xmas ham mac and cheese is a WINNER. A very simple and quick dish to whip up on your boxing day hangover!
Ingredients:
1 packet (500g) macaroni (we love Diamond )
2 cups cubed ham (we love Heller’s Xmas Champagne Leg Ham)
2 cups baby spinach (we love The Fresh Grower)
¼ cup sun dried tomatoes, sliced (we love Delmaine)
70g butter (we love Anchor )
70g plain flour
2 cups milk (we love Anchor )
1 cups grated parmesan cheese(we love Perfecto Italiano)
1 cup cheddar cheese
A handful flat leaf parsley (we love Superb Herb)
A handful of rosemary (we love Superb Herb)
Salt & Pepper
We love to serve this classic mac & cheese matched with crisp Giesen riesling.
Method:
- Bring a large pot of water to a boil. Add a good amount of salt. The salter is as salty as the sea! Cook macaroni according to the packet instructions. Drain.
- Melt butter in a saucepan over medium heat.Stir in flour, salt, and pepper until smooth, about 3 minutes. Slowly pour milk into butter-flour mixture continuously stirring until mixture is smooth and bubbling for about 5 minutes. Add cheese, ham, spinach and sun-dried tomatoes. Mix well. Fold macaroni into the cheese sauce until coated
- Top with more cheese and toppings and bake for 15-20 minutes until golden and crispy
- Serve immediately.
