St. Patrick's Day Colcannon Recipe

Top of the mornin' to ya! It's time to celebrate St. Patrick's Day with a traditional Irish dish that's sure to make your taste buds dance. Our Colcannon recipe is a creamy blend of mashed potatoes, cabbage, and a generous dose of dairy goodness from our sour cream, rich butter and Anchor Blue milk. So put on your green and get ready to indulge in this tasty Irish treat!

Method
  1. Boil the potatoes until tender. Drain, mash well and set aside to keep warm.
  2. While the potatoes are boiling, cook the shredded cabbage in another pot of boiling water for 2-3 minutes until softened. Drain and set aside. 
  3. Melt the butter in a small pot, add the milk and bring to a gentle simmer. Remove from the heat and add to the mashed potatoes, mixing until well combined. Season with salt and pepper.
  4. Stir the Anchor Sour cream through the potato mixture, add the cooked cabbage and stir again. Transfer to a serving dish and garnish with the chives.
