Whipped Blueberry Cream Cheese Bagel

What better way to celebrate Mother's Day than serving up a whipped blueberry cream cheese bagel? We used delicious Rebel Bakehouse bagels. Make sure to enjoy in bed with plenty of cuddles!

Instructions
  1. Put the frozen berries, sugar, lemon zest and juice in a saucepan. Bring up to a boil, then lower the heat, cover and simmer gently for 5 minutes.
  2. Add the cornflour water mix, cook until thickened and then set aside to cool.
  3. Put half the blueberry compote in a bowl with the Anchor cream cheese and use an electric whisk to blend until smooth. Put into the fridge until ready to serve.
  4. To serve, spread the toasted bagels with the blueberry cream cheese. Top with the remaining blueberry compote and garnish with some mint leaves.
