Make these fluffy and buttery waffles for the whole family. They’re delicious served with stewed feijoas and yoghurt.
For the stewed feijoas: add feijoas, apple, cinnamon, lemon juice and water to a saucepan over medium heat. Bring to a boil then simmer for 6–8 minutes, stirring occasionally, until tender. Sweeten with honey, to taste.
Waffles: Sieve flour and baking powder into a large bowl. Add caster sugar and salt and mix well. Pour in melted butter, milk, yoghurt and eggs, and stir until well combined.
Heat and grease your waffle iron. Ladle in ¾ cup of waffle batter (it will be thick), or the adequate amount for your specific waffle iron. Cook until golden and fluffy. Repeat with remaining batter.
Serve hot waffles slathered in yoghurt, with stewed feijoas and maple syrup. Yum!
