Protein+ Peach Overnight Oats

This bircher muesli is packed with Anchor goodness, including our new Probiotic+ Strawberry and raspberry Greek yoghurt. Make it the night before and treat yourself to digestive balance first thing in the morning!

Instructions
  1. Put half the peaches and all the juice in a bowl with 1 cup of oats, a2™ Milk by Anchor Blue™, Anchor Protein+ Peach yoghurt and mix well. Refrigerate alongside the remaining peaches overnight.
  2. For the oat and almond crumble, toast the remaining ½ cup of oats with the almonds in a fry pan for approx. 5 minutes, stirring often until golden. Set aside on a baking tray lined with non-stick baking paper to cool.
  3. In the same pan, melt the butter, golden syrup and brown sugar until bubbling and the sugar has dissolved.
  4. Add the oats and almonds back to the pan to coat in the mix then tip onto the baking tray to cool. Keep in an airtight container for up to one week.
  5. To serve, spoon the overnight oats into bowls or glasses, top with Anchor Protein+ peach yoghurt, peach slices and add a spoonful of the crumble. Sprinkle over the white chocolate and enjoy!
