Peri Peri Chicken with Flat Breads

This Peri Peri Chicken will become a family fave in no time. The sweet and spicy chicken is served with a cooling, herby  yoghurt dressing, homemade flatbreads and a delicious coleslaw – it’s certainly a reason to gather the family.

To Serve
  1. Preheat the oven to 180°C fan bake, or a BBQ to a medium-high heat.
Peri Peri Sauce
  1. Whisk all the ingredients together in a bowl. Set aside.
To cook
  1. Place the chicken in a roasting dish and pour over ¾ of the sauce, making sure the chicken is well-coated. Bake in the oven for 1 hour, basting with the remaining sauce every 20 minutes. After an hour, remove and test for doneness, then rest for 10 minutes before carving. If using the BBQ, cook for 30 minutes on each side, basting with remaining sauce as you go.
Yoghurt Dressing
  1. Mix all the ingredients in a bowl. Refrigerate until ready to serve.
Flat Breads
  1. Place all the flatbread ingredients in a bowl and use a spoon to mix together. Then, use clean hands to pat the dough and start to bring it together.
  2. Dust a clean work surface with the extra flour, then tip the dough out onto it.
  3. Knead for a minute or so to bring it together some more. Put the dough into a floured-dusted bowl and cover with a plate.
  4. Dust a clean work surface and rolling pin with flour. Divide the dough in half, then divide each half into 6 equally-sized pieces (roughly the size of a golf ball) so you have 12 pieces of dough.
  5. With your hands, pat and flatten the dough, then use a rolling pin to roll each piece into a 12cm round, roughly 2mm to 3mm thick.
  6. Place a griddle pan (or non-stick fry pan) on a high heat. Once hot, cook each flat bread for 1 minute on each side, or until bar-marked and puffed up, turning with tongs.
  7. Brush the flatbreads all over with melted butter as they come off the griddle, then set aside and keep warm.
  1. To serve, carve up the chicken, and serve alongside the coleslaw, flatbreads and don’t forget that delicious yoghurt dressing to counteract the spicy goodness of the peri-peri chicken.
