Protein+ Popsicles

These are  quick and easy family favourites, perfect for a snack or the kids' lunchboxes.

Method
  1. Place the raspberries and sugar in a small saucepan and add a squeeze of lemon juice.
  2. Bring to a simmer for 5-10 minutes until the water content of the berries has reduced and thickened slightly. Set aside to cool.
  3. In a bowl, whisk the Anchor Protein+ yoghurt and cream together. Fold in the cooled raspberries to create a ripple effect.
  4. Use a spoon to distribute the mixture evenly between the popsicle moulds. Secure the sticks in place and then freeze for at least six hours or overnight.
  5. Tip – you can replace frozen raspberries with your berry of choice, or use a combination for a ‘very berry’ flavour.
