Corn, Potato and Mozzarella Cakes

These delicous corn, potato and mozzarella cakes are a tasty dish for entertaining or for an afternoon snack. If corn isn't your jam, swap this out for peas or capsicum.

1 cup flour

½ teaspoon baking powder

2 cups mashed potato

1 can corn kernels, drained

3 tablespoons Anchor Fresh Milk

1 cup Mainland Mozzarella Grated Cheese

1 tablespoon finely chopped parsley

1 egg

Salt and pepper

Butter for frying


  1. Mix all the ingredients together in a large bowl, being careful to not over mix, just until it comes together.
  2. Shape ¼ cup batches of mixture into 10 patties or croquettes and dust with a little extra flour.
  3. Heat a film of oil in a frying pan and fry cakes in batches until golden on both sides.
  4. Serve hot with your favourite sauce or chutney.
