These are  quick and easy family favourites, perfect for a snack or the kids' lunchboxes. 

Muffin batter
Raspberry & Lemon
Ham, Cheese & Chive
Method - Raspberry & Lemon Muffins
  1. Preheat your oven to 180°C bake.
  2. Combine the flour, baking powder, baking soda and salt in a bowl. Set aside.
  3. Place the butter and sugar in another bowl. Use an electric mixer to beat together until pale and fluffy. (You could also use a stand mixer fitted with the paddle attachment.) Add the vanilla extract and then one egg at a time, beating well between each addition.
  4. Reduce the mixer speed to low, and gradually add the flour mixture.
  5. Add the Anchor Sour Cream, vegetable oil, and lemon zest and mix until fully combined. Gently fold the raspberries into the mixture.
  6. Divide the batter evenly between the muffin cases
  7. Bake the muffins for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Remove the muffins from the oven and let them cool slightly in the muffin tin before transferring them to a rack to cool completely.
